Il Fontanaro is an organic and agritourism farm in Umbria on the border with Tuscany. It was established in 1973 and today has about 4000 olive trees.
Harvesting is manual and pressing in the private mill takes place during the same day, to obtain the best quality.
The private mill on the farm is modern and state-of-the-art: it has two phases and is powered by a photovoltaic system.
Olive pomace and waste products are used as soil improvers on the farm.
