Pure Chardonnay grape variety - part of which comes from a vineyard over 50 years old. Production per hectare60 quintals/ha. Harvest and Vinification Particular attention is paid to a ripening that brings good aromatic expressions. Harvesting is done by hand and in crates of approximately 10 kg. After selection in the vineyard, the whole bunches are carefully sorted and cleaned on a treadmill. This operation is immediately followed by washing the bunches and drying them by means of a gentle jet of air. After soft pressing, fermentation takes place in temperature-controlled steel tanks. At the end of this, half of the mass remains in steel tanks with its fine lees while the other part, again with its fine lees, is placed in 2nd and 3rd passage barriques for 6 - 8 months. Before being put on the market, it matures in the bottle for at least 6 months. Organoleptic notes The colour is similar to shiny gold, young and precious, furrowed by green hues that contrast its youthful nature and the composure that can be detected when the glass is moved. Suave, pungent and peppery on the nose, it draws towards the senses yellow fruit and fragrant tropical fruit. Then it is the scents of roasted peanuts and crunchy almonds that complete a complex nose with a savoury base. Spherical in the mouth, the role of wood peeps out with subtle flavours of sweet spices. The protagonist is still ripe fruit until a pleasant dynamism takes over, making the mouth feel vibrant.

VitignoGrechetto in purezza – blend di due vigneti selezionati per caratteristiche pedo-climatiche.Produzione per ettaro40-50 q.li/HA.Vendemmia e VinificazioneLe uve vengono raccolte solo al raggiungimento di una leggera surmaturazione, senza appassimento. La prima cernita dei grappoli, o parti di essa, avviene in vigneto, dove la raccolta è manuale in cassette di basso contenuto. Prima della pressatura le uve vengono attentamente osservate e mondate attraverso una accurata cernita e pulizia su un tappeto mobile. Immediatamente i grappoli sono delicatamente lavati senza rischio di rottura dell’acino e poi asciugati con un delicato getto d’aria.All’estrazione del mosto fiore segue una fermentazione che avviene in serbatoi di acciaio con temperatura controllata. Al termine di questa, circa un terzo della massa viene adagiato in piccoli legni di 2° passaggio per circa 6 mesi. L’altra parte, per lo stesso tempo, affina in acciaio sulle proprie fecce fini.All’imbottigliamento segue ancora una permanenza di almeno tre mesi prima di essere posto in commercio.  Note OrganoletticheHa il colore di una luminosa giornata estiva, come una paglia ben essiccata da un sole cocente, si muove sfarzoso nel calice generando un gioco di luci chiare e piacevoli. Il suo volume si percepisce attraverso una struttura solida di frutta gialla appassita, sottobosco di rosmarini striscianti, lavande sfiorite e foglie di cedro. Sono ambienti festosi fatti di agrumi canditi e bacche di vaniglia ad invitare all’assaggio che appare vivace, dinamico e compiuto fin dal primo sorso. Il suo carattere giovanile rinfresca una importante componente saporifera fatta di frutta e sale. Lungo, con leggera astringenza e chiusura piacevolmente amaricante.

After soft pressing, fermentation takes place in temperature-controlled steel tanks. The wine then matures in steel on its fine lees until it reaches its maximum potential.Organoleptic NotesGolden yellow, it immediately catches the eye with its sacred light. Sinuous and compact in movement, it finds its perfect dimension in the goblet.In the bouquet it is extremely composed with nectarines and medlars alternating with pleasant incursions of aromatic herbs and walnut blossoms.Very linear in its entry into the mouth, composed and coherent in every moment of tasting with the senses already conveyed. In the closing, the mouth is clean and vibrant and it is here that Grechetto puts its signature through a slight astringency in the sensitive parts of the mucous membranes. Fresh and satisfying, it is capable of great pleasures.
