The ancient art of extra virgin olive oil production has been handed down in the Trampolini family from generation to generation since 1785. The oil mill, however, has an even more ancient history; it was in fact an integral part of a commandery of the ancient chivalric order of the Templars, the famous warrior monks. Proof of this is the majestic Templar Abbey of San Bevignate that stands a few steps away from the oil mill, one of only two still existing in Europe and the only one in Italy. It is therefore since 1300 that within our walls, following an unchanged tradition, the production of high quality Extra Virgin Olive Oil has been perpetuated.

Proceso productivo

The olives are harvested by hand in our estate's olive groves located in the hills surrounding the city; the prevalent cultivars are Dolce Agogia, Moraiolo, Frantoio and Leccino. They are harvested from mid-October until the first ten days of November when they ripen early/optimally. Processing into oil takes place within 12 hours of harvesting; the oil is extracted cold using an Alfa Laval X4 continuous cycle plant.
