The vineyard chosen for the production of Metodo Classico is located on hilltops over 400 metres above sea level. There the grapes can develop the necessary acidity for a long-lived sparkling wine. Matured for 36 months on the lees, it shows complexity on the nose, and in the mouth reveals freshness and perfect balance. Metodo Classico was a wish on a starry night, father and daughter have made it a reality.Characteristics:Vibrant yellow colour with incessant and persistent perlage. On the nose bread crust, white peach, almond blossom and hazelnut notes. On the palate great grace and balance, thanks to a fine structure enhanced by a pungent fresh-savoury contrast, which in the finish restores the fruitiness. Hazelnut notes typical of the variety. By offering you this Extra Virgin Olive Oil, we would like to convey to you the emotion we feel when harvesting the olives from our oldest olive grove. These olives have survived the changing seasons and the passing of time, and still give us a product that has been the same for thousands of years: genuine in the same way.
